Standard ethernet cables are twisted pair, making them highly resistant to noise. They also carry digital signals, so as long as the signal is relatively free from noise, it's going to be transmitted perfectly.
A flat ethernet cable is going to be significantly worse than a standard ethernet cable because you lose the advantage of twisted wires that cancel out noise. The idea that this design will reduce noise is nonsense. And the suggestion that an ethernet cable carrying digital audio signals could somehow impact audio quality is utter hogwash.
